We would like to know if it's possible to add an "urgency" field to issues so that the processing time is automatically recorded, or alternatively, to add a processing time based on the "criticality" level.

Add urgency on issues is possible with the screen customization plugin : just ass idUrgency.
But this won't solve your request : this will not automatically add possibility to define delays on issues.
This only exists as delays for tickets.
Adding delays on priority or criticallity does not exist, not on issue and not on any onther item.
