This should not occur on V5.5.4 as it's been fixed on V5.5.0 : project leader cannot add team member with profile Over his default one.
Take care that to define this right, profiles are "ordered" depending on sort order value.
This means that if you have profile with sort order < sort order of admin profile, you can add resource to project with Admin profile.
And it is normal to have screens displayed depending on all available profiles.
This is done to be able to have a project member with project leader rights on one project.
He then should have access to project leader screens for this project.
